Piquette is an age-old beverage with roots tracing back to ancient Greek and Roman times. Thousands of years later, Ollie's Piquette is crafted using the same traditional approach. After pressing Grenache grapes for red wine, we take the leftover skins and add water to rehydrate and ferment them using any residual sugars still clinging to the skins. The mixture stays on the skins for three to four days with one punch-down per day before being drained and settled in tank. Once settled, it's bottled with native yeast and a touch of organic priming sugar to spark a natural fermentation. The entire process is Sans soufre—no added sulfur.
The result? A bright, refreshing, low-alcohol beverage with a gentle effervescence and a whole lot of character. Only ~1,800 bottles produced.
